After a long day at work, the last thing many of us feel like doing is cooking a healthy gourmet meal. We end up doing the dinner dash to whip up whatever’s most convenient.
Concierge Stephanie shares her favorite quick dish to make when she gets home. This recipes allows for a lot of freedom to choose your own flavors and customize the dish to your liking. We think this would be a great make-ahead lunch recipe for the week!
15-minute Chicken Tortellini Salad
You will need:
- 1 package precooked cheese tortellini
- 2 boneless skinless chicken breasts
- Your choice of lettuce, chopped, or prepacked salad kit
- Grated cheese
- Dressing of choice
- Extra virgin olive oil (EVOO)
- Spices of choice
In a stainless steel pan, swirl EVOO over medium heat until warm. Chop chicken into cubes and saute in pan until golden brown, adding mild flavor (recommend garlic, salt and pepper, rosemary, oregano) as it cooks.
Boil tortellini five minutes or as directed on packaging, and drain.
In a large bowl, combine lettuce, chicken, tortellini. Top with grated cheese of choice, dressing, and croutons. Serve with your favorite chilled white wine (recommend Umberto Fiore Moscato d’Asti).
