I’m always searching for sweet and healthy snack ideas. I’ve been experimenting in the kitchen and came up with this yummy Perfect Fit Protein chocolate cake that is easy to make and cooks in the microwave.
Microwave Mug Chocolate Cake
- 1 Banana
- 2 Eggs
- 1/3 Cup Coconut Oil
- 1 Teaspoon Baking Powder
- 1/3 Cup Organic Perfect Fit Protein
- 1/3 Cup Pure Maple Syrup
- 1/2 Teaspoon Salt
- 1/3 Cup Unsweetened Cocoa Powder
- 1/3 Cup of Strong, Cooled Coffee or 1/3 Cup Unsweetened Almond Milk
Yields approx. 3 mug cakes
Mix all wet ingredients together, including banana, and set aside. Mix dry ingredients in a separate bowl and slowly combine with the wet ingredients, making sure to mix fully until adding more. Mix carefully – don’t over mix!
Spray the inside of microwave safe coffee mugs with coconut oil and add 1/3 cup of the batter to each mug. Microwave for 1 minute – 1 minute, 15 seconds.
To add a little something extra, I added 1/4 teaspoon peppermint extract to one of the cups. (It was delicious!) You could also use any kind of extract you prefer including almond or coconut extract.
